What’s Holi without thandai? Traditionally synonymous with this festival, thandai is a cooling beverage made with milk, spices, nuts, and rose petals. Thandai contains natural protein from the nuts and milk, as well as the aromatic goodness of saffron and roses. We make it with Raw Pressery’s naturally lactose free Almond Beverage instead, for some extra plant-based protein. Its cooling properties are sure to help you stay hydrated on a hot day spent playing Holi outdoors. Our version of thandai maintains its classic flavours in a new lactose free avatar to keep your gut happier! Feel free to make this drink healthier by substituting white sugar with jaggery. Bura na khao, Holi hai!

Ingredients to make Lactose free thandai recipe:

¼ cup almonds, sliced
3 tbsp pistachios, sliced
3 tbsp cashews, sliced
2 tbsp green cardamom
1 large cinnamon stick
5 tbsp sugar (or to taste)
1 pinch saffron
1 tbsp rose petals
Optional: 1 tsp fennel seeds (saunf)

Steps to make Lactose free thandai recipe:

1.
Soak the nuts, spices, and rose petals for at least an hour in warm water. Drain and set aside, saving half the soaking water.
2.
Blend the mixture with the water we set aside earlier until the mixture is smooth.
3.
Bloom the saffron in a few tablespoons of Raw Pressery’s Unsweetened Almond Beverage.
4.
In a blender, combine the Unsweetened Almond Beverage, sugar, thandai mix, and saffron infused Almond Beverage. Blend until smooth.
5.
Serve chilled.
